Healing Powers of Natural Foods-Recipes

These recipes from the book that I like very much and try to use in everyday life. The book-"Foods That Heal" by Dr. Bernard Jensen is a real quide to understanding and using the healing powers of natural foods.

Quinoa with Leeks and mushrooms

Simple, light and nourishing leeks are the favorite of French chefs.
½ cup quinoa
2 medium leeks
1Tsp oil
1tsp tarragon
1cup sliced mushrooms
Sea salt to taste
Wash and drain quinoa, clean the leeks and chop them. Heat the oil in a large skillet, add tarragon and the chopped leeks, stir them for couple seconds, add quinoa and stir for 1-2 minutes. Add mushrooms, salt and boiling water. Cover and simmer over low heat for 15-20 minutes.
Serve with big green salad.


Lemon –Tamari Dressing

This dressing tastes good and has only 10 calories per Tsp.
¼ cup lemon juice
¼ cup olive oil
1-2 Tsp tamari
1-2 cloves garlic pressed
1-2 tsp Dijon mustard
Place all ingredients in a small glass jar, cover tightly and shake well.
You can use this dressing on green salads, marinated vegetables, even over hot vegetables.




Celery – Rice Curry

2 Tsp oil
3 cups chopped celery
1 medium onion chopped 1 tsp curry powder
1 tsp cumin 1 tsp grated ginger
½ tsp turmeric
½ tsp mustard powder
1 cup long grain brown rice or basmati rice
1 ¾ cup boiling water
Sea salt (optional)
1/3 cup cashews, chopped and lightly roasted
1/3 cup raisins

Heat the oil in a large skillet. Add the celery, onion, and spices. Stir over medium –high heat for 2-3 minutes. Wash and drain the rice and add it to vegetables. Pour the boiling water over vegetables-rice mixture, add salt, cover and cook for 40 minutes on low heat. When the rice is done add the nuts and raisins, fluff the rice with fork and serve.
